Could I use Shedd's Spread Country Crock Original to make sugar cookies?

Don't do it, you will end up with a flop. Spreads in a tub like the Shedd's have a lot more water and air in them which means much less fat for your recipe. You cookies will spread more from the water and get hard from the lack of fat when they cool.
